Pink Lady® Apple Vegan Loaf

Full preparation

  1. Preheat the oven to 180⁰C.

  2. In a medium bowl, combine the flour, cinnamon and baking powder. In a separate large bowl, whisk olive oil and coconut sugar.

  3. Add flour mixture to the oil mixture and mix until combined. To this, add the almond milk, the vanilla essence and mix again.

  4. Next, add the apples, raisins and pecans into the batter. Fold to combine and finally pour the batter into a loaf pan. Top with diced apples and pecans and press lightly into the batter.

  5. Place in the oven and bake for 40 minutes. Keep an eye on it as this may vary depending on ovens. Insert a toothpick into the middle and if it comes out clean, it’s ready. Allow the loaf to rest in the pan for at least 5 minutes before serving.

  6. Then, grab a slice and enjoy!
